Ayala Coffee’s newest chapter unfolds in Union Township, New Jersey as a warm, contemporary café rooted in Filipino culture, community, and craft. What began as a humble pop-up coffee cart evolved into a neighborhood coffee shop in 2021—and has now grown into a full-fledged café pairing thoughtfully sourced specialty coffee with Filipino-inspired food. The expanded space reflects Ayala’s maturation as both a brand and a gathering place: layered textures, natural tones, and modern detailing create an environment that feels at once elevated and deeply familiar, inviting guests to linger, connect, and return.

For La Union Studio, Ayala Coffee represents an important milestone—one of the studio’s first projects outside of Washington State and a signal of its growing reach beyond the Pacific Northwest. Designed as more than a place to grab a drink, the café serves as a cultural anchor for New Jersey’s thriving Filipino community. Owners Matt and Trixie envisioned a space where people see themselves reflected in the food, the atmosphere, and the shared experience of being together—a place that feels like home. From signature beverages to comforting dishes that nod to heritage, every design decision reinforces a shared mission: to celebrate identity, foster belonging, and create spaces where culture and everyday ritual meet.
